An elegant Chardonnay with 40% fermentation in quality French oak hogsheads, sourced from the pristine Eden Valley. The natural flinty character from the vineyard is astounding due to the good quality fruit resource. Superb mouthfeel and texture achieved with moderate lees stirring and solids retained in fermentation.

Nose:
White peach, fig, and hints of ripe melon with flintstone notes.
Palate:
The palate is balanced and fresh with some layers of complexity. The peach, cashew, fig and melon flavours are enhanced by the textural mouthfeel from oak fermentation. The mineral elements are refreshing and help present a very stylish Chardonnay.
Cellaring and Food:
This wine is drinking beautifully now and will also benefit from medium-term cellaring; 5-8 years. We recommend serving this Chardonnay with Camembert cheese, creamy pasta, seafood, chicken and mushroom risotto.
Winemaking:
Half fermented in barrel and half fermented in stainless steel, aged on lees for 8 months.
