Description

Winemaking

Gypsy is made using our home grown organic Chardonnay, which is picked early to get some lovely fresh green apple characters and pressed off skins for cool fermentation in stainless steel. Like a well-bred English girl of yesteryear, Gypsy is sent off to finishing school in the Barossa (not Switzerland in this case) to find her fizz, before coming home to be presented to polite society for all to see and admire in her gorgeous packaging.

  1. Vinny Blanc

Spring Seed’s Gypsy is made using organic Chardonnay grapes. Picked early to get some lovely fresh green apple characters and pressed off skins for cool fermentation in stainless steel. The ‘Gypsy’ is then sent off to finishing school in the Barossa to find herself. The young woman comes of age and shows her stuff in a classic Blanc de Blancs style. Pale straw colour, a hint of green apple, fine mousse and gentle characters of citrus. A gracious sparkler for any occasion while being as versatile as it is engaging. Paired best with seafood and oysters. Serve chilled.

Lovely bubbly, ever so slightly funky although not obvious it is a natural wine and definitely too good to use for an aperol spritz mixer.
