Cabalié Cuvée Vieilles Vignes 2024 is a red wine produced by Herv Sabardeil in the Pays d'Oc IGP region of France. It is a blend of Grenache (60%) and Carignan (40%). The grapes are sourced from old vines, with an average age of over 60 years. The grapes are hand-harvested and then fermented in stainless steel tanks at a controlled temperature. After fermentation, the wine is aged in a combination of stainless steel tanks and oak barrels. It is a full-bodied wine with aromas of dark fruit, spice, and herbs. The palate is rich and flavorful, with notes of blackberry, plum, black pepper, and garrigue. The tannins are firm but well-integrated, and the finish is long and lingering.
