“Part of the vineyard was planted in the ’60s with cuttings from Henschke’s Mount Edelstone Vineyard, the remainder planted in the ’90s, destemmed, 6 days on skins, matured for 2 years in French puncheons (5% new). A very, very distinguished Eden Valley shiraz; the intense black fruits/licorice/spice fruit has absorbed the French oak & largely dismissed the tannins, the latter providing a distant drum beat on the exceptionally long finish & aftertaste.” – James Halliday

As leaders in organic production, it was obvious that Paxton needed a product for this category. In addition to Natural, PF & Organic, we wanted to make a young, drink NOW style shiraz that was different from our existing Shiraz styles.
The Thomas Block Chardonnay is a biodynamically produced organic wine that is vegan compliant. Past vintages have consistently all scored 90+ points from the recognised wine critics.

“Colin Angas planted grenache in the ’60s, but when 7% failed it was replaced (accidentally) with mataro. Destemmed, open-fermented & matured in French puncheons (20% new) for 2 years. The bouquet is evocative, with notes of spice, brush fence & plum spice, the palate equally complex, putting the lie to the idea these varieties won’t ripen in the Eden Valley.
